Asian Chicken Salad

 

Chicken is a good source of protein and is filling. This salad also contains plenty of vegetables for fibre and mandarins which are high in vitamin C.

 

  • 300 g lettuce (any variety)
  • 4 Mandarins, peeled and separated
  • 2 ¾ boneless and skinless chicken breasts
  • 40 g snow peas or fresh pea pods, cut in half (optional)
  • 10 g crispy noodles
  • 40 g sliced almonds, toasted
  • 160 ml bottled Asian sesame dressing or other Asian dressing (try and get a low fat version)

     

Directions:  

  1. Slice the chicken breast into small slices and cook.
  2. Toss all of the ingredients together and toss through dressing to lightly coat
  3. Serve (perfect for BBQ’s)
